Tomato Salsa

Ingredients

1 cup tomatoes - diced or canned diced tomatoes.
1/2 cup onion - finely chopped.
1-2 jalapeno peppers - finely chopped or ground.
2 cloves garlic - finely chopped or crushed.
1 oz fresh lime juice (1/2 lime).
2-4 tbsp fresh cilantro - chopped.
1 tsp olive oil.
1 Tbl red wine vinegar.
1/2 tsp chili powder.
1 tsp salt.
1/2 tsp black pepper.
2 green chilis or a 4 oz can. (OPTIONAL)
1/4 cup Bell pepper - finely chopped. (OPTIONAL)
1/2 cup celery - finely chopped. (OPTIONAL)

Preparation

  1. Combine half of the tomatoes and all the other ingredients.
  2. Mix 5 seconds in a blender at medium speed.
  3. Add remainder of tomatoes, mix 2 seconds at low speed.
    WARNING: don't blend too long or the salsa will become watery!
  4. Chill for a couple of hours, serve w/chips.
